About Popcorn

Popcorn was first discovered 5,600 years ago in bat caves in New Mexico. It was also used in India and China hundreds of years before Columbus reached the Americas. Popping corn or popcorn is a kind of maize which when heated in oil or dry heat puffs up. For improved popping yield special varieties of corn are grown; Zea mays L. subsp. mays is a special kind of flint corn cultivated for this purpose. Native Americans were the first to develop popcorn a thousand years ago. In the late 15th century, popcorn was introduced to Europeans when Christopher Columbus saw Native Americans making popcorn headdresses and popcorn corsages which they sold to Columbus' sailors. Around 1612, French explorers in the Great Lakes region documented the use of popcorn by Iroquois, who popped corn using hot sand in a pot. They have also documented the consumption of popcorn beer and popcorn soup during an Iroquois dinner. Early North American colonists are believed to have loved popcorn so much that it was served for breakfast with cream and sugar, representing the first puffed breakfast cereal. Popcorn was quite popular from the 1890s to the Great Depression, where street vendors pushed gas-powered or steam poppers through parks, expositions and fairs. During the Great Depression, popcorn was one of the few luxuries that were affordable during the time of financial strife. Popcorn and movies go hand in hand. In the Unites States and Europe, popcorn is very common in movie theaters, often served with butter and salt or sugar and vinegar. In the United Kingdom, Germany and parts of Asia, it is flavored with sugar, nutritional yeast or spices. Like all cereal grains, every kernel of popcorn contains some amount of moisture in its starchy endosperm; the popcorn kernel is thick and impervious to moisture. When the kernel is heated above boiling point, the water inside the kernel turns to steam generating an internal pressure of about 9 ATM. The steam is held tight by a pericarp in tightly sealed popcorn kernels which starts building pressure until the pericarp suddenly ruptures, causing a small explosion. The force of this explosion turns the kernel inside out which gives popcorn its unique texture.
