About Barbecue

Barbecuing originated in southern America in the 19th century, and pork was the only meat on the grill since pigs did not require any rearing as such. Many parts of southern America were below the poverty-line, so communities would get together and go hog hunting. Eventually, slaughtering the pigs became a celebration and ultimately the traditional Southern BBQ came into existence. Different techniques have evolved from the original BBQ. The type of wood plays an important role because each type of wood burns at a different rates and the intensity of the heat emitted also varies. Combining different types of wood and also charcoal can bring out different smoked flavors in the meat. Charcoal can be bought in processed and packed bags; these are called charcoal briquettes. The alternative to briquettes is traditional lump charcoal; these are not ground and shaped. A 'chimney starter' is usually used to get the coal burning consistently. However electric irons or lighter fluid are also used to heat the coal. Wood chips from the mesquite, hickory and other fruit trees are soaked in water and added to the coal to add flavor to the meat; this method is known as 'smoking' the meat. Natural gas or propane gas grills are also widely available; these grills are easier to light-up and to maintain. When cooked in these grills, the meat won't collect deposits of coal that is emitted from the traditional grilling methods. Even today, the tradition of spending summer Sunday afternoons in the backyard by the grill is followed over the country. An army of sauces lead by the barbecue sauce surrounds the meat at the picnic table.
